From The Sugar Happy Kitchen: Low Carb Strawberry Walnut Salad

It is a warm day on the Pacific Coast. I wanted a light crispy, crunchy filling salad to compliment my main chicken dish without the high-carb dressing. If you are on a diet, want to lose weight, or prevent high blood sugars, you may want to add this as a side or main dish to your list of meal options.

 

I started by combining some of the foods I was craving as an experiment; fresh refrigerated strawberries to quench my sweet tooth. Crispy cold hearts of romaine lettuce to keep the salad light. Crunchy carrots to satisfy my need for a different texture and room temperature raw walnuts to add a bit of protein.

Ingredients:

3 Heads of Romaine lettuce Hearts

3 medium carrots

3 Large Strawberries

¼ cup of raw walnuts

1/3 Cup Olive Oil

2/3 Cup of Balsamic vinegar

1 large clove of garlic

 

Instructions:

Wash and chop three heads of romaine lettuce hearts and place in a bowl

Wash and cut 3 medium carrots and place on top of lettuce in the bowl

Wash and slice three large strawberries and place them in the bowl

Chop ¼ cup of raw walnuts and sprinkle in the bowl

In. a separate small bowl, add olive oil, balsamic vinegar, and crushed raw garlic and whisk until creamy.
