From The Sugar Happy Kitchen: Keto Morning Frittata 4.9 Net Carb Recipe

This is a great meal to serve when you have visiting guests or family staying at your home. You can make the Morning Frittata for breakfast, lunch or dinner. Add a mixed green salad in the afternoon or evening to make it more of a complete meal. You may prefer my Gorgonzola Pecan Salad over a simple mixed green salad.
Ingredients:
6 Eggs
1/2 cup of milk
1 scallion stock
5 grape tomatoes
1/2 ounce of fresh raw parsley
2.5 ounces baby Bella mushroom
1 tablespoon feta cheese
teaspoon of salt
teaspoon of pepper
Cooking Instructions:
Preheat oven to 400 degrees
Cooking time 25 minutes
1- Whisk eggs, milk, salt and pepper in a bowl
2- Chop parsley, scallion, mushrooms and tomatoes
3- Pour the whisked egg and milk into pan
4- Place chopped vegetables evenly in pan
5- Crumble feta cheese and spread evenly in pan
6- Place pan in oven and cook for 25 minutes
