From the Sugar Happy Kitchen: St. Patrick’s Leg of Lamb Low Carb Gluten-Free Meal

St. Patrick is a festive day for Irish descendants from all over. It is a way we honor the priest who became a Saint-like image in Ireland. The day usually starts with a church service, followed by festivities with friends and family. In some cases, a parade.

 

Although it is considered a secular celebration, people from all cultures come to together in the United States to celebrate the Irish’s triumphs. Over time, the religious implications have changed as the masses from all backgrounds honor the immigrants. Who, like most Americans, gave up their families and homes for a better life on a different continent.

 

My grandfather Charles McFeeley boarded a transatlantic ship at 19 from his home in Carrowmenagh, Ireland. As an adolescent, he assisted Trans Atlantic ships through the Donegal Corridor to San Francisco, earning him a spot on a vessel. He changed his immigration status in 1886 to become a U.S. citizen.

 

Four generations later, we still have roots in San Francisco. My sister lives near my great-grandparent’s first home. 

 

San Francisco is well known for its culinary and diverse culture. Lamb is served in fine dining and Eastern restaurants. The gamy flavor comes from its fat flavor -branched-chain fatty acid. It provides a unique taste that distinguishes it from other gamy entrees.

 

I grew up eating leg of lamb, stuffed lamb, and lamb burgers. I adore the rich and unmistakable unique flavor. 

 

My simple Leg of Lamb recipe is easy to make with a low-carb menu in mind for happy blood sugar levels.

 

I have also included four side dishes, Baked Cauliflower, Green Beans with Garlic and two different salads to choose from.

 

Add the  Cauliflower and Mixed Green Salad.

 

Add Sauteed Green Beans with Garlic.

On March 17th, before you sit down to eat, make sure to toast, celebrating the Irish people with love and admiration.

 

Ingredients :

• 5 Pounds of cauliflower heads

• 1 Clove garlic raw

• 1/4 Cup olive oil

• Dash of salt

• Dash of pepper

Instructions :

1) Preheat oven to 3500 Fahrenheit.

2) Place 5 pounds of cauliflower heads in a large bowl

3) Mix Ingredients

• 1 Crushed clove garlic raw

• 1/4 Cup olive oil

• 4 Fresh sprigs of rosemary finely cut

• Dash of salt

• Dash of pepper

4) Pour ingredients over Cauliflower and toss

5) Place tossed cauliflower head on a flat tray and place in oven

6) Cook for 30 minutes

* Cooking time may vary depending on the make and model of the oven.
