From the Sugar Happy Kitchen: Keto Chocolate Raspberry Nut Parfait

If you would like a light dessert , try this delightful chocolate raspberry nut parfait.

The French word parfait describes a layered dessert served in a glass. If you don’t like Macadamia or raspberry, modify the recipe to your liking.


Ingredients for Parfait

1/4 cup of Macadamia nuts or your nut of choice 

1/4 cup of Lily choc chips

1/4 cup of coconut flakes

2 tablespoons of keto Raspberry sauce


Ingredients for Raspberry Sauce

12 Ounces fresh raspberries 

1 Tablespoon of orange zest

3/4 Cup of water

1/2 Cup Erythritol Sugar Substitute Swerve powder sugar


 Instructions for Raspberry Sauce

Heat water, sugar, and orange zest in a saucepan until the water is warm on medium heat

Add one 12 ounce bag of fresh raspberries

Put a lid on the pan and bring it to a boil.

Turn stove off and let sit for 5 minute

Mash the raspberries

Pour into a bowl- allow to cool, then refrigerate.


Instructions for Keto Chocolate Raspberry Nut Parfait

Place Macadamia nuts in the bottom of a glass. 

Add one tablespoon of whip cream.

Add Low Sugar Lily Chocolate Chips and coconut flakes.

Add another 2 tablespoons of whip cream.

Drizzle two tablespoons of keto raspberry sauce.
